Ingredients (for 6)

  • 1.2 kg seedless watermelon, cubed
  • 1 large (~300 g) cucumber, sliced
  • ~40 g red onion, thinly sliced
  • 225 g feta, crumbled
  • 20 g fresh mint, torn
  • 3 tbsp extra-virgin olive oil
  • 1 lime (β‰ˆ3 tbsp juice), juiced
  • to taste sea salt + black pepper
Tip: If onion is too strong, soak slices in ice water for 10–20 minutes.

How to make it

  1. Cut watermelon into bite-sized cubes; slice cucumber into small half-moons.
  2. Thinly slice the red onion; tear the mint leaves.

  4. In a large bowl, combine watermelon, cucumber, onion, mint and crumbled feta. Pour dressing over and toss gently.
