1. Turkish-Style Green Beans with Olive Oil

Turkish green beans

Why Green Beans Are a Summer Favorite? Green beans are one of the most beloved vegetables of summer due to their abundance and light, refreshing taste. 🌞 Thanks to their high water content, they help cool the body during hot weather. When cooked with olive oil, they become an easy-to-digest, healthy, and light meal. Harvested in season, green beans are at their most flavorful and pair perfectly with other summer ingredients like tomatoes 🍅 and garlic 🧄 making them a staple in traditional Turkish summer cuisine. It's a dish loved by everyone from kids to the elderly bringing comfort and flavor to every table. 🍽️

Ingredients: ¾ cup olive oil, 2 medium onions - finely chopped, 3 cloves of garlic, 1 kilo of green beans, 1 cup water, 1 level tablespoon of granulated sugar, salt, 3 medium tomatoes

Preparation: Place your pot on the stove and add the olive oil and heat. Add your onion and sauté until soft. When your onions are soft, add the garlic and green beans and mix. Add the water, granulated sugar and salt and close the lid. After boiling over medium heat, cook on low heat for 30-45 minutes. 5 minutes before removing your beans from the stove, add the tomatoes and remove from the stove. Let it brew.

2. Watermelon Salad with Feta, Mint & Walnuts

From Turkish Tradition to Summer Salad:
This salad isn’t originally a "salad" at least not in the traditional sense. In Turkey, watermelon 🍉 and white cheese (especially feta-like beyaz peynir) are a beloved duo, often enjoyed after dinner or during lazy afternoons by the sea 🌊. I took this simple summer classic and gave it a fresh, slightly elevated twist by turning it into a proper salad—with mint, lemon 🍋, and crunchy walnuts. It's still familiar, still refreshing, but just a bit fancier ✨.

Ingredients: 2 cups of watermelon (cubed), 1 cup of white cheese or feta (cubed or crumbled), a handful of walnuts (roughly chopped), 1 tablespoon of fresh lemon juice, a few fresh mint leaves (finely chopped)

Preparation: In a large bowl, combine the cubed watermelon and white cheese gently. Add the chopped walnuts on top. Drizzle with lemon juice and sprinkle the chopped mint. Toss everything lightly, garnish with a few whole mint leaves if desired, and serve chilled.

3. Cacık (Turkish Yogurt & Cucumber Dip)

Cacik
Is This the Easiest Summer Side Dish Ever?
Cacık is a cool and refreshing Turkish yogurt-based dish made with cucumbers 🥒, garlic 🧄, and dill 🌿. It’s perfect for hot days and often served with grilled meats or fresh bread. The yogurt helps digestion, and the olive oil adds a nice flavor. Chill it well before serving ❄️ for the best taste. You can also add mint or red pepper flakes 🌶️ for a little twist!

Ingredients: Olive oil, yogurt, cucumber, garlic, fresh dill, salt, water (to thin if needed), and a pinch of black pepper.

4. Güllaç (Traditional Turkish Rose Milk Dessert)

Building the Layers of Flavor & Freshness:
Although Güllaç is a dessert deeply rooted in Ramadan traditions, it's also perfect for hot summer days ☀️ thanks to its light texture, chilled serving style, and gentle flavor. It’s made using thin, starchy pastry sheets soaked in sweetened milk and layered with crushed walnuts. Topped with ingredients like pomegranate seeds, rose petals, or even sliced strawberries 🍓, sour cherries, or sweet cherries 🍒, it becomes a fresh and elegant end to any summer meal.

Ingredients: 10 güllaç sheets , 1 liter milk , 1 cup sugar , 1 cup crushed walnuts , 1 tsp rose water , optional toppings: pomegranate seeds, dried rose petals, sliced strawberries , sour or sweet cherries

Preparation: Warm the milk with sugar until fully dissolved (but don’t boil), mix in rose water, then gently layer güllaç sheets in a tray by soaking each in the milk, add walnuts in the middle layers, finish with more milk on top, chill it in the fridge for a few hours, and before serving, decorate with pomegranate, rose petals, or fresh fruits like strawberries or cherries. ❄️🌸
