  • 1/4 teaspoon freshly ground black pepper – coarse grind for texture
  • 1/4 teaspoon freshly grated nutmeg – my secret weapon

While the pasta cooks, melt butter in a large, deep skillet over medium-low heat. Add minced garlic and sauté for exactly 60 seconds – just until fragrant but not browned. Browning the garlic will create bitterness that can't be undone.

The Gentle Simmer

Pour in room temperature heavy cream (cold cream can cause separation) and bring to a gentle simmer – never a boil. Reduce heat to low and simmer for 2-3 minutes, stirring occasionally with a wooden spoon.

The Cheese Moment

Remove the pan from heat and gradually whisk in the freshly grated Parmigiano-Reggiano. Add it in three batches, whisking continuously until each addition is fully melted. Add black pepper and freshly grated nutmeg.

Pre-grated cheese contains anti-caking agents that will make your sauce grainy. Always grate fresh!

Return the pan to low heat and add the drained pasta. Gently toss using tongs, coating each strand with the velvety sauce. If the sauce is too thick, add a splash of the reserved pasta water – the starch in this water helps the sauce cling to the pasta.

Warm your plates by placing them in a 200°F (93°C) oven for 5 minutes before serving.
