  3. Stir in the sugar, red wine, and beef stock. Allow the stew to simmer for 3–4 hours or until the oxtail is tender. Be sure to check every 30 minutes to prevent it from drying out; add more stock or water as needed. During the last 30 minutes of cooking, add the sweetcorn to the pot (optional).
  4. Serve with pap, rice, or mashed potatoes and enjoy!
