Why I Love It

This dish is a comfort food that reminds me of my chosen Carribean family in Canada. The salt fish is perfectly seasoned, and the bake is soft and delicious. It's my go-to dish for impressing friends and family. It's simple yet full of flavor, and every bite brings back memories of family gatherings and good times.

Ingredients

Here’s what you need to make the perfect Salt Fish and Bake.

For the Bake

  • 3 cups all-purpose flour
  • 4 tablespoon shortening or butter
  • 2 1/2 teaspoon baking powder
  • 3 Tablespoon sugar
  • 1 1/4 teaspoon salt
  • 1 1/2 cups water or more
  • Oil for frying

For Sauteeing the Salt Fish

  • 1 lb Saltfish (desalted and flaked)
  • 1 small onion, chopped
  • 1/2 bell pepper, diced
  • 2 cloves garlic, minced
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1-2 green onions chopped
  • 2-3 tablespoon parsley
  • 2-3 to matoes diced
  • 1 tsp thyme
  • 2 tbsp oil

Step-by-Step Preparation

Step 1: Prepare Saltfish

Step 1: Prepare the Saltfish by desalting and flaking it into small pieces.

Step 2: Chop Tomatoes and onions

Step 2: Chop vegetables: onions, tomatoes, green onions, tomatoes etc.

Step 3: Sautee all chopped vegetables

Step 3: In a medium-large skillet, add oil, onions, garlic, and sauté, for about 2-3 minutes, stirring constantly to prevent any burns. Followed by tomatoes continue cooking for about 3 minutes

Step 4: Add all spices

Step 4: Then add thyme, paprika, hot pepper and black pepper, mix until ingredients have been thoroughly combined. Cook for about 5 minutes or more.

Step 5: Throw in salt fish in sauteed vegies

Step 5: Finally throw in salt fish, cook for 5 minutes or more -adjust the seasoning, to taste. Remove from the heat and let it cool.

Step 6: Mix all dry ingredients for bake

Step 6: In a large bowl, whisk together flour, sugar, baking powder, and salt; add shortening or butter, and, using your fingers. .

Step 7: Add water to the dry ingredients

Step 7: Gently stir in water into dry ingredients until all is moistened and holds together (like a ball).

Step 8: Knead the dough

Step 8: Place on a floured board and knead for about a minute. Let it rest for about 15-20mins.

Step 9: Cut into pieces

Step 9: Roll out dough in to 1 inch thick, cut into desired shapes or use 3 inch or larger cookie cutter to cut dough.

Step 10: Fry the Bake

Step 10: In a large, sauce pan pour vegetable oil, until it is at least 3 inches (or about 5 centimeters) high, place on medium heat until oil is 350 degrees.

This dish originates from the Caribbean, where salted fish was once a staple ingredient for preserving seafood. The combination with a soft, fried dough called "bake" has become a beloved dish across many Caribbean islands.
